THE CHEFS’ Forum

Alfio Arcardi, top chef and owner of the Michelin star restaurant, Buon Cibo in Rome, answers your questions.

1   KHRIS from Stockholm

Your restaurant, Buon Cibo, is in the centre of Rome, but where do you live?

ALFIO   I live in Tivoli near Rome with my wife and son, Enzo. He’s six. Tivoli is beautiful and quiet. I love it there. We have a house in the hill, it’s our country home.

2   JANE from Manchester

I know your wife works in the restaurant, too. What does she do there?

ALFIO   Maria is a pastry chef. She’s my best chef and my best friend. I love her very much and I think she loves me! We’re very happy.

3   SARAH from Dublin

I have all your cookbooks and your recipes are fantastic. What olive oil do you use in your dishes?

ALFIO   Bramasole is my favorite olive oil. It’s from Tuscany and it’s perfect for cooking! Our friend, Pedro, works on the Bramasole estate. He delivers this amazing olive oil to us every month. He loves our restaurant.

4   TURAN from Istanbul

I have a lot of favourite chefs and I have all their cookbooks. Who are your favourite chefs?

ALFIO   Massimo Bottura, Locatelli, Giada De Laurentiis! I adore them all. But my favourite is Bottura. I really like him and his food. He’s an amazing chef.

5   GEORGE from Bucharest

I love cooking because my mother is an excellent cook. I’m 32 and she still cooks for me and my wife every Sunday. When my mum visits us, I like cooking for her.  Why do you like cooking?

ALFIO   I like cooking because I love fresh food and we grow a lot of our food for the restaurant. My brother has a farm near us and we get a lot of fresh vegetables from him. Buon Cibo is a family business. I love my family and I love cooking for them.

6   HELEN from Sydney

A lot of famous chefs have restaurants around the world. How many restaurants do you have?

ALFIO   I have two. One in Rome and one in London. My favourite city is New York. I want to open a Buon Cibo there one day.

7   EWAN from Glasgow

Your life is very busy. When do you relax? What do you do in your free time?

ALFIO   Sunday is always our free day. It’s our favourite day. We relax at our home in Tivoli. We walk our dogs and sometimes we visit my brother and his wife on their farm. We are very close to him and his lovely family. Their farm is beautiful.

Hi Dom,

I’m on holiday in Dubai this month. Our hotel is fantastic – really new and comfortable, and really near the Burj Al Arab. I’m here with my best friend, Helen. She’s really nice and funny.

The food is international and delicious. I like all the restaurants at the hotel, but the Indian restaurant is my favourite. It’s wonderful!

Dubai is an interesting place – very modern. It’s really hot – too hot to walk – we always travel by car. All the buildings are so big and tall. The Burj Khalifa has 163 floors! The view is amazing – you can see all the way to the sand of the desert. The shops are great, but very expensive.

There are no green parks, but there are lovely golden beaches, and we love swimming here.

This is a super holiday. It’s great in Dubai!

See you soon.

Love,

Louise
